pinterest recipe: baked oatmeal.

i've been sharing some pinterest-inspired recipes i've been trying. here's one of my most-recent favorites...

i have loved these -- especially as the individual portions (with a variety of toppings) but you could also make it in a large pan and serve it up like brownies.

i altered the recipe just a bit -- here are the ingredients i used:

2 eggs
1 tsp vanilla extract
2 cups unsweetened applesauce
1 banana mashed
1 1/2 tsp stevia powder (or use 1/2 cup honey)
5 cups old fashioned rolled oats
1/2 cup chia seeds*
1 tablespoon ground cinnamon
3 teaspoon baking powder
1 teaspoon salt
2 1/2 cups milk (i used almond milk)
toppings i chose: chocolate chips + frozen berries
(cupcake liners - i used these for the regular sized muffin pan, but just sprayed w/ coconut oil for the mini pan!)

*i'm a new fan of chia seeds -- high in omega-3 fatty acids, fiber & a complete protein! 

mix all ingredients (adding milk last) then add toppings once portioned into baking cups.
bake at 350 for 30 minutes.

so once you start mixing everything together, it's a little like "whoa! 5 cups of oats and 2 cups of applesauce and 2 1/2 cups of milk! this is a LOT of batter!" and you will be correct. it is a lot. but it makes a lot of delicious baked oatmeal! (mine made 12 regular muffins + 20 minis) and these freeze great -- i kept a few in the fridge for the days immediately following, but have been defrosting what we want in the microwave in the morning & they're ready in a minute!

my favorite combo so far is chocolate chip + raspberry. yum-o.

sugarfreemom.com also has a steel-cut oats recipe here where she used the chia seeds (her rolled oats called for flaxseed, but i switched them!) -- great blog & great recipe. i'll definitely be making these again & again!!
