engagement pics featured!

i briefly mentioned our fabulous photography company (once like a spark) in my 31 days series, and our outside-of-the-box engagement pics! well, if you head over to their blog this week you'll see a bunch of high-res photos featuring yours truly... (seriously, those are some big photos! whoa!)

we had such a blast at both locations -- the deck at the icon (aka my favorite view of the city) were our more "formal" photos, and then we headed to west elm and took over the store... and that's where the real marisa + jeff came out :)

tuesday tunes - country summer part two.

a few weeks ago i shared some of my favorite summer country songs. well -- it is officially summer now (don't even get me started on these 100 degree days - wowza.) and country radio is still the best summer soundtrack. so here are a few more i'm lovin...

here are some things i'm lovin right now...

1. emi-jay hair ties - made by the 2 coolest-slash-smartest teens ever. they don't break your hair and look cute on your wrist. win-win.
2. my TOMS ballet flats - when i want to look a little less hipster and a little more profesh.
3. love does by bob goff - my current summer read. really enjoying it!
4. green smoothies - i especially love a particular one from whole foods. so refreshing.
5. parks & recreation - our current go-to when we need to head into the great indoors & escape the blazing heat.

tuesday tunes - the lumineers.

attention world, the lumineers have arrived. but it's been nothing short of a crazy journey to get them to where they are today...

their self-titled debut album released just a couple of months ago, and they're already gaining a huge following... (thanks in part to "ho hey" being used in a bing commercial this month!) they're selling out shows and getting great reviews... we're going to see them in nashville in august and i can't wait!
and i'm seriously loving the entire album... been playing in on repeat at work and it's awesome.

tuesday tunes - eden's edge.

staying on the country theme...i introduce to you eden's edge.
this little trio is nashville-based and super talented. i mean, a girl mandolin player? you can't get much cooler. i actually remember seeing cheryll and hannah 5 years ago play in a tiny pizza place right after they moved to town to pursue this music thing.. and hannah was finishing school. and now they're on a tour opening for rascal flatts... needless to say, they've come a long way :)

pinterest recipe: baked oatmeal.

i've been sharing some pinterest-inspired recipes i've been trying. here's one of my most-recent favorites...

baked oatmeal. (pinterest links to sugarfreemom.com)

i have loved these -- especially as the individual portions (with a variety of toppings) but you could also make it in a large pan and serve it up like brownies.

i altered the recipe just a bit -- here are the ingredients i used:

2 eggs
1 tsp vanilla extract
2 cups unsweetened applesauce
1 banana mashed
1 1/2 tsp stevia powder (or use 1/2 cup honey)
5 cups old fashioned rolled oats
1/2 cup chia seeds*
1 tablespoon ground cinnamon
3 teaspoon baking powder
1 teaspoon salt
2 1/2 cups milk (i used almond milk)
toppings i chose: chocolate chips + frozen berries
(cupcake liners - i used these for the regular sized muffin pan, but just sprayed w/ coconut oil for the mini pan!)

*i'm a new fan of chia seeds -- high in omega-3 fatty acids, fiber & a complete protein! 

mix all ingredients (adding milk last) then add toppings once portioned into baking cups.
bake at 350 for 30 minutes.

so once you start mixing everything together, it's a little like "whoa! 5 cups of oats and 2 cups of applesauce and 2 1/2 cups of milk! this is a LOT of batter!" and you will be correct. it is a lot. but it makes a lot of delicious baked oatmeal! (mine made 12 regular muffins + 20 minis) and these freeze great -- i kept a few in the fridge for the days immediately following, but have been defrosting what we want in the microwave in the morning & they're ready in a minute!

my favorite combo so far is chocolate chip + raspberry. yum-o.

sugarfreemom.com also has a steel-cut oats recipe here where she used the chia seeds (her rolled oats called for flaxseed, but i switched them!) -- great blog & great recipe. i'll definitely be making these again & again!!
